Fix: order save updates only changed fields (#40147)

Order save() updates all fields instead of only changed ones, causing data loss in concurrent processes

Description (*)

When working with orders, I noticed that calling save() after changing a single field results in an UPDATE query on all fields, not just the modified ones.
